Thai Tom Kha Bone Broth Soup
Thai shrimp coconut soup with Lonolife Thai Curry Beef Bone Broth is flavorful, creamy soup and Keto friendly!
Servings: 4-6
INGREDIENTS:
- Broth:
- 1 Lonolife Thai Bone Broth Packet
- 1 25.36oz container coconut milk @thaikitchen
- 2 cups water
- 1 tablespoon Mushroom umani powder @traderjoes
- Juice of 1/2 a lime or 4 @truelemon lime packets, plus more at serviceZucchini & shrimp:
- 1.5 pounds Argentine shrimp
- 4 medium sized zucchini, cut in halfmoon coins
- 2 Tablespoons EVOO
- 1 Lonolife Thai Bone Broth Packet
- 2 Tablespoons tomato paste
DIRECTIONS:
Prepare the broth:
Bring to boil & then simmer for about 30 minPrepare Zucchini & Shrimp:
Cook zucchini to desired doneness, add shrimp & cook to desired doneness. Add cooked zucchini & shrimp to broth & serve
Lime or @truelemon lime powder packets, at service
Note from author: I made the broth separate from the shrimp & zucchini, then added it all together. This helps to not overcook the shrimp or undercook the zucchini!
