Taco Soup With Bone Broth

This easy, low-carb soup is packed with protein and filled with zesty, crave-worthy flavor. It’s a Mexican dish classic with a twist that will even picky eaters will love!

Servings: 6 • Prep Time: 10 Minutes, Total Time: 35-40 Minutes

 


INGREDIENTS:

  • 1 lb ground meat of your choice
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 small zucchini, diced
  • 2 cups frozen corn (or 15oz can)
  • 28oz can diced tomatoes, undrained
  • 2 servings LonoLife Beef Bone Broth with 3 cups water
  • 2 tbsp minced garlic
  • 15oz can of beans, undrained
  • 2 tsp taco seasoning
  • 1 jalapeño, chopped
  • 3 limes, juiced
  • Salt & pepper to taste
  • Garnish with cilantro, sour cream & cubed avocado

DIRECTIONS:

1) In a large pot sauté meat with taco seasoning, salt and pepper. Cook until brown. (About 5 minutes)

2) Add in remaining ingredients and simmer for 30 minutes. Add more seasoning such as chili, cayenne pepper, or lime juice if needed. You can also add in some of the remaining jalapeño seeds to spice it up.

3) Serve and top it off with some avocado, sour cream & cilantro. Enjoy! *Option to add 1 cup of cream cheese to make it high fat. Perfect for the keto diet!
