Pumpkin Oatmeal Breakfast Bars
These healthy Pumpkin Oatmeal Breakfast Bars have a sweet surprise inside. Now that we are in the colder months, this warm and cozy, make-ahead breakfast recipe is an ideal way to keep collagen in your routine. They’re easy to make and are perfect for on-the-go!
Servings: About 16 bars Prep Time: 5 minutes Cook Time: 40 minutes
INGREDIENTS:
- 1 cup pumpkin puree
- 2 eggs
- 1 serving LonoLife Vanilla Collagen Peptides
- 1 cup unsweetened almond milk
- ¼ cup maple syrup
- 2 cups gluten free oats
- ½ cup ground flaxseed
- ½ tbsp baking powder
- 1 tsp vanilla
- 1 ½ pumpkin pie spice
- *Optional: add diced apple
DIRECTIONS:
1) Mix together all ingredients until well-combined.
2) Line an 8x8 baking pan with parchment paper and spoon mixture into pan. Bake at 400 degrees for 30-40 minutes.
3) Once cooked, allow to cool & slice into bars.
4) Top them off with fresh banana, more pumpkin pie spice, peanut butter or whatever you prefer and enjoy! *Note: You can store these in the fridge for a few days or wrap them individually and freeze them. Simply warm them up in the microwave and add your desired toppings.
