Herby Chickpea Salad
Adding LonoLife Unflavored Collagen Peptides to our chickpea salad gives any sandwich a nutritious boost!
INGREDIENTS:
- 1 batch Vegan Chickpea Salad (recipe below)
- 2 whole-grain bagels
- 2 tablespoon Dijon or yellow mustard
- 2-4 large butter lettuce leaves
- 1 cucumber, thinly sliced
- 1 carrot, thinly sliced using a vegetable peeler
- 4 radishes, thinly sliced
- 1 large handful alfalfa sprouts
Vegan Chickpea Salad
- 1 can chickpeas, rinsed and drained
- 1 packet LonoLife Unflavored Collagen packet
- 1/4 cup chopped Italian parsley
- 1/4 cup chopped dill
- 2 tablespoons whole grain or Dijon mustard
- 2 tablespoons mayo
- Salt and pepper, to taste
DIRECTIONS:
Make your chickpea salad first by mixing all of the ingredients and using salt and pepper to taste
Spread your go-to sandwich condiment on- we chose Dijon mustard!
Put your sandwich together. Layer veggies, a generous amount of chickpea salad, and some lettuce to top it off
Finish by topping with sprouts and bread
