Coconut Chicken Curry

A classic meal that everyone loves, this spicy and slightly sweet recipe is sure to be a hit in your kitchen! It builds on our already flavorful Thai Curry Beef Bone Broth to make a creamy and savory meal.

Servings: 4 Total Time: 25 minutes

 

INGREDIENTS:

  • 4 chicken breasts
  • 3 cloves minced garlic
  • 2 tbsp minced ginger
  • 3 tbsp red curry paste
  • 1 packet LonoLife Thai Curry Beef Bone Broth
  • 1 tbsp squeezed lime
  • 3 tbsp coconut oil
  • 5 chopped mini sweet peppers
  • 1 can full-fat coconut milk
  • 1/2 chopped yellow onion
  • 2 tbsp brown sugar
  • salt + pepper to taste
  • pinch of cilantro

DIRECTIONS:

1) Heat 2 tbsp of coconut oil on medium high heat in a large skillet

2) Add in onion and sauté for about 4 minutes

3) Add in ginger and garlic then reduce to low heat

4) Add in curry paste and LonoLife Thai Curry Beef Bone Broth

5) Stir frequently for 2 minutes then return to medium high heat

6) Add in 1 tbsp of coconut oil, sweet peppers, and chicken

7) Stir frequently for 5 mins

8) Pour in coconut milk, brown sugar, lime juice, salt, and pepper

9) Stir for 10 minutes or until chicken is fully cooked through and mixture has thickened

10) Best served over rice or naan bread and topped off with lime wedges and cilantro!
